Sautéed Brown Rice with Chicken, Broccoli and Carrots
This is a one pan wonder, F.E.D (Fast Easy & Delicious)!
1 Tbs Extra Virgin Olive Oil
2 Boneless Skinless Chicken Breast cut into chunks
1 Cup Broccoli chopped
1 Cup Baby Carrots chopped
1 10.5 oz bag Fully Cooked Long Grain Brown Rice (Trader Joe’s)
¼ Cup Fat Free Chicken Broth
2 Tbs Soy Sauce
Salt
Pepper
Garlic Powder
Season the chicken chunks with salt, pepper and garlic powder. In a large sauté pan over medium/high heat, add the chicken and cook until lightly brown. Add the broccoli and carrots and cook for five minutes. Add the chicken broth and cook for two minutes. Add the cooked brown rice and stir until heated through. Stir in the soy sauce and serve.
